Have you ever wondered how to make your own yoghurt? I am trying to boost my gut health by increasing intake of easily digestible and gut-healthy probiotics (e.g. yoghurt).
I still buy commercially-prepared yoghurt from the supermarket however thought it would be good to add different strains of probiotics to my diet to increase the diversity of my microbiome (gut environment). I did some research on which probiotic strain to use. There is some trial data suggesting the probiotic L. reuteri can eliminate gut bacteria , has anti-viral properties, reduces sick leave and improve gut symptoms in preterm newborns .
I then experimented with Dr William Davis’s recipe as it contains minimal additives and is quite simple. Instead of the BioGaia product used in his recipe, I have substituted it with Nature’s Way Primadophilus Reuteri as it comes in a powder form and is more cost-effective. I’m lactose-intolerant so used coconut cream. You can substitute the coconut cream with full-cream cow’s milk cow’s milk however omit the sugar as it already naturally contains lactose. The finished product is delicious however will only keep a few days in the fridge. Serve with your favourite toppings (fresh fruit, nuts and seeds)
Here’s the recipe :
Ingredients
270ml can of Ayam coconut cream
1tsp Nature’s Way Primadophilus Reuteri
1 tbsp sugar (omit sugar if using cow’s milk)
6 squares Green & black’s 85% dark chocolate, broken into pieces
Method
• In a pot, heat the coconut cream for 5 mins on low heat.
• Next, add the dark chocolate and sugar. Stir till well-dissolved and smooth.
• Cool mixture to 40 ⁰C/104 ⁰F then stir in the probiotic powder. Refrigerate overnight and serve in the morning. Yummy on it’s own or sprinkled with your favourite seed and nuts.
